ounce) can of diced green chillies. Add ½ cup of the falafel mixture to
this and stir to mix well. Smoothly spread the turkey-falafel mixture in
an 8-by-12-inch oval casserole. Spread the remaining falafel over the
meat mixture. Bake in a 350-degree oven until well browned, about 45
minutes. While the pie bakes, make a salad of 2 cups of diced, peeled
jicama and 2 cups of diced cucumbers. Season to taste with rice vinegar
and salt. To serve, spoon falafel pie from the casserole and offer low-fat
plain yoghurt and lime slices with it. You can serve the salad on crisp
lettuce leaves. This lunch is so easy to prepare that even small children
can do it. It became a favourite Mother’s Day lunch in our family for that
reason. Strawberries are ripe at that time, so you can make the lunch
special by serving strawberries sprinkled with powdered sugar for
dessert. Iced tea or a light zinfandel wine are perfect beverages for this
lunch.
