afflictions of the mind that make their victims' lives hardly worth living. And laughter soon
spreads. When a happy child gets into a bus and laughs at the delights which surround it, the
long faces of the other passengers soon relax and soften. Humour has laid its healing touch
on them. (From Fifty Model Essays by Joyce Miller)

                                                  UKRAINIAN CUISINE
Ukrainian cuisine is closely linked to the customs, culture and way of life of the
Ukrainian people. It is famous for its diversity and quality of flavour.
The most popular Ukrainian dish is “borsch”. This thick and delicious soup is
prepared with a variety of ingredients including meat, mushrooms, beans, and even prunes.
Mushroom soups, bean and pea soups, soups with dumplings and thick millet
chowders are also popular. “Holubtsi”, or stuffed cabbage, is another favourite dish, as are
“varenyky” (pyrogies) filled with potatoes, meat, cheese, sauerkraut, or berries such as
blueberries or cherries. Varenyky are often mentioned in folk songs. Ukrainians like dairy
products. Some samples: cottage cheese pancakes, “riazhanka” (fermented baked milk).
Ukrainian sausage is very tasty. It is preserved in a special way – in porcelain vessels
               smothered in melted fat.
There are no holidays without pies, “pampushky” (type of fritter), “baba” (a tall,
cylindrical cake), honey cakes. Of course, every region of Ukraine has its own recipes and
               traditions.

                                                  The Pechena Kartoplia
The bread and potatoes have been the main national dishes of all Slavonic people for
               centuries.
The speciality of the Pechena Kartoplia, the delicious baked potato, is cooked before
customers' eyes. The smoking potato is taken out of the oven. Then it is cut in halves. Butter
and cheese are added and the potato is mashed into appetizing soft puree. Then the filling is
put inside. It is of the customer's choice – herring, pickled or fried mushrooms, crab meat,
